Ingredients

  • 1 onion quartered
  • 1 clove garlic
  • 1 tablespoon olive oil
  • carrot, roughly cut
  • Pumpkin - cubed
  • celery, chopped
  • broccoli (cut into flowerets)
  • Potato, diced
  • sweet potato
  • brussels sprouts
  • zucchini
  • Capsicum
  • 2 tablespoon TMX vegetable stock concentrate
  • 1 litre water

Recipe's preparation

  1. Place garlic and onion into TMX bowl and chop for 5 seconds, speed 6.  

    Add olive oil and saute for 2 minutes, 100 degrees, speed soft.  

    Add whatever vegetables you have on hand, as long as your baby has previously been                    introduced to them on their own.  Chop for 10 seconds, speed 7.

    Add water and stock concentrate.  Cook for 20 minutes, 100 degrees, speed 1.  

    Blend to a puree consistency for 15-20 seconds by slowly going from speed 1 to speed 9.  

    With the addition of some freshly baked Spelt Bread Rolls from the Everyday cookbook, this becomes a meal that the whole family can enjoy.  My husband recently requested this after having his wisdom teeth out. It's just the right consistency. Not too chunky and not watery.  This is also a great way to rescue           the vegetables that are past their prime by the end of the week.

     

Tip

Feel free to add canned lentils, beans or tomatoes to vary the flavour.  Small pasta shapes, broken angel hair spaghetti or cooked rice are also wonderful additions.  Don't be afraid to throw in whatever you have available.
