Ingredients

Pancake Batter

  • 50 g Desiccated Coconut
  • 50 g almonds
  • 200 g zucchini, chopped
  • 2 eggs
  • 1/2 teaspoon cinnamon, optional
  • 1 teaspoon honey, optional, adds just a touch of sweetness.

Recipe's preparation

    Pancake Batter
  1. Grind the almonds and coconut for 10 secs./speed 10. 

  2. Add the zucchini and puree for 5 secs./speed 10. 

  3. Add the egg, cinnamon and honey and mix for 5 secs./speed6. 

  4. Cooking your Pancakes
  5. Line a baking tray with a Thermomat or baking paper and spoon the batter onto it. Spread out to form small pancake sized circles. 

  6. Bake for 15-20 minutes until set at 170'C if fan forced or 180'C if not. 

  7. To serve
  8. I make a batch and keep them in the fridge to serve for a few days. I sandwich them together with butter and a little more raw honey and cut into pieces. 

Tip

Cooking in a pan is tricky and messy, its so much easier to bake these! Plus while they are baking you can get on and do other things.
