Ingredients

Pastry

  • 4 sheets frozen puff pastry sheets, thawed

Filling

  • 4 spring onions/shallots/green onions, washed and chopped into 2cm pieces
  • 5 slices shortcut bacon, Each slice cut into 4 pieces
  • 3 eggs
  • 300mls cream
  • 200 grams grated cheese
  • 1 punnet cherry tomatoes, washed and halved
  • S & P to taste

Bread cases

  • 12-20 slices thin white sandwich bread
  • olive oil for spraying

Recipe's preparation

    Pastry
  1. Preheat the oven to 190C

    1. Grease your patty/muffin pans and cut thawed pastry into circles to fit the base of your pans.

    2. Set aside.
  2. Filling
  3. 1. Add spring onion and bacon pieces to the Closed lid"Closed lid" .

    2. Chop sp 4/15 secs.

    3. Set aside.

    4. Add eggs, cream and S & P to (unwashed) bowl and blend sp4/15 seconds
  4. Assembly
  5. 1. Spoon app. 1 tsp of onion/bacon mix into the base of each pastry cup.

    2. Spoon app. 1.5 tblspns over the top of this mixture.

    3. Sprinkle with grated cheese and place a cherry tomato half onto each.

    4. Bake in a preheated oven for about 15-20 minutes, until puffed and golden.

    5. Cool in pans for a few minutes before transferring to a wire rack.

Tip

These are really delicious and so easy to make.

They can be served warm, or at room temperature.

They freeze really and reheat from frozen too.

Can be made with many filling variations, e.g spinach and cheese for a vegetarian option. Recipe can be reduced by using 100mls of cream/per egg.

    Made these today for school lunches. Quick and easy to make. I used shredded ham instead of bacon. Tastes good.
