- 240 grams water
- 400 grams bakers flour
- 2 level teaspoons dried yeast
- 1 teaspoon sugar
- 2 teaspoons bread improver
- 4 teaspoons bakers malt, optional
- 1 level teaspoon salt

1. Add ingredients to the "Closed lid" in the order listed.
2. Slowly turn dial to sp 7/ 15 secs.
3. Scrape bowl and knead "Dough mode" , 5 mins.
4. Place onto a Silpat mat or into a greased bowl, cover and rest for 30 minutes,
4. Punch dough down and shape into 8-12 rolls.
5. Quickly run each roll under running water and place onto a large greased/lined baking tray.
6. Cover lightly again with greased clingwrap, and prove in a warm spot until doubled..up to 45 minutes.
7. Slash the top of the rolls if desired, spray lightly with water, and sprinkle with seeds if desired. Leave to rest uncovered for 10 minutes.
8. Preheat oven to 200C.
9. Bake for 20 minutes, spraying with water twice during baking, until golden and hollow when tapped.
10. Cool on a wire rack.

Tip
These delicious rolls are a regular part of Germany's breakfast menu. Try them warm from the oven, split and served with butter and jam or honey. Often served with boiled eggs.
Thetexture of these rolls is a slightly chewy crumb, and the spraying of water ensures a crunchy crust.
Baker's malt/sugar is available from home brewing sections in larger supermarkets and adds to the texture and colour of the finished product.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Fantastic breakfast roll that was a hit with my family. The dough looked quite wet to start with but I trusted the instructions and was not disappointed.
We made our into long rolls and these were one of the best we have had ☺️
