- 2 apples, Skin on, cored and quartered
- 100 g Butter, Cubed
- 330 g Self Raising Flour
- 80 g brown sugar
- 30 g honey
- 1 teaspoon vanilla extract
- 2 eggs
- 250 g Milk
- 20 g Chia Seeds.

Preheat oven to 200°C. Grease Muffin tray (I usually get around 16-18 large muffins from this recipe)
Place apple into bowl and chop 3 sec/speed 7 or until apple is finely chopped. Remove apple and set aside until ready to use.
Place butter into bowl and melt 90 sec/60°C/speed 2.
Add S.R. flour, brown sugar, honey, vanilla extract, eggs, milk, chia seeds and reserved apple to bowl. Mix 10 sec/"Counter-clockwise operation" /speed 4 or until combined.
Pour batter into muffin tins and bake 200°C for 15min or until an inserted skewer comes out clean.

I added 1 1/2 tsp cinnamon
1 1/2 tsp nutmeg
and pepitals on top for some crunch
Easy to mAke. Good for lunch boxes. Read other comments and didn't add full amount of sugar, but then my partner said they tasted 'too healthy', lol. Thanks for the recipe.
I replaced the apple with pear and the honey with rice malt syrup. Baked them for 22 mins and out of the oven they came light and fluffy. Yum! I will make another batch to freeze for school lunch boxes.

Great, I only added 60g of brown sugar and was still sweet enough. I also didnt take out the apple as I am lazy and didnt want to have to clean another bowl.
My 2yr old daughter loves them - Have to make another batch and put some in the freezer!!!
Took a lot longer to cook than the recipe says (maybe mine were too big) but they are really delicious. The chia seeds give a nice crunch. Will definitely make again, thanks Mummacook
