Ingredients

Crepes

  • 150 grams plain flour
  • 350 gram full cream milk
  • 1 egg
  • 1 teaspoon sugar
  • 1 pinches salt

Filling

  • 500 grams cottage cheese, Farm cheese or Quark is best. See tips
  • 4 eggs
  • 150 grams sugar
  • 1 Lemon, Rind only
  • 1 teaspoons vanilla extract

Topping

  • 200 grams sour cream
  • 1 egg
  • 2 tablespoons sugar

Recipe's preparation

    Crepes
  1. Add crepe ingredients to the bowl and mix 20 secs / speed p5
  2. Scrape down the sides of the bowl and mix 5 secs / speed 5
  3. Transfer to a bowl and set aside for 20 minutes
  4. Wash and dry mixing bowl
  5. Filling
  6. Insert butterfly whisk. Place egg, sugar and vanilla into bowl. Mix 2 minutes / speed 3
  7. Remove the butterfly whisk. Add cottage cheese and lemon rind, mix 15 secs / speeed 6
  8. Scrape down sides of the bowl and mix 10 secs / speed 6
  9. Transfer into a bowl and set aside.
  10. Wash and dry mixing bowl
  11. Topping
  12. Add ingredients to the bowl and mix 10 secs / speed 6
  13. Assembly
  14. Cook crepes over a medium heat, place 2 1/2 - 3 tabelspoons of batter into frying pan and swirl to cover base. cook for 1-2 minutes until golden and flip to cook the other side. Repeat.
  15. Spread 2 tablespoons of cheese mixture down the centre of the crepe and roll up, place them seam side down in a lightly grease 9x9 inch ovenproof dish. Continue until dish is full.
  16. Spread the topping over thetop to cover the crepes.
  17. Bake in 180 degree oven for 25 minutes or until golden. Serve warm or cold

Tip

1. If the batter is too thick add some more milk or sparkling water / soda water.
2. There is a good Quark recipe in the vegitarian cookbook.
3. It would also be nice with ricotta
4. you can easily double the pancake batter for more and then if there is any left over fill with nutella. yum.
