Muffins
- 75 grams Butter
- 2 eggs
- 1 teaspoon vanilla extract
- 2 teaspoons honey
- 100 grams Milk
- 3 ripe bananas
- 250 grams Self Raising Flour
- 1 teaspoon baking powder
- 1/2 teaspoon bicarbonate soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon Nutmeg
- 100 grams caster sugar
- 1 pinch salt
- 1-3 scoops choc chips

Preheat oven to 180 degrees
Line a 12 cup muffin tin with muffin liners
Melt butter in thermomix for 2 minutes 80 degrees speed 3
Add the eggs, honey, vanilla and milk and mix for 10 - 15 second speed 3
Add bananas and blend for 5 seconds speed 6
Add flour, bi carb, baking powder, sugar, cinnamon, nutmeg and salt and mix for 5 - 7 seconds speed 5
Add choc chips ( or any fruit or nut of your choice) and mix on reverse
for 5 seconds speed 4
Spoon muffin mixture into liners, filling each one around 3/4 full
Bake in oven for 20 - 25 minutes until firm and golden
Preparation
Tip
You can add in any nuts or dried fruit to this recipe as you like. I've used walnuts and saltanas and they turned out great.

Delicious, need to crack my eggs into a cup first not straight into thermi, some egg shell made its way into our muffins but they were still yum! Thank
I only added 60g sugar and a hanful if walnuts, didnt have any vanilla, cinnamon or nutmeg on hand.
