Banana Choc Chip Muffins
- 180 grams ripe bananas
- 240 grams self-raising flour
- 1 1/2 level teaspoons baking powder
- 100 grams caster sugar
- 100 grams Butter, softened
- 2 eggs
- 120 grams chocolate chips

- Preheat oven to 180°C
Grease muffin tray with butter and put to the side.
add banana to bowl and mash spd 4 for 8 seconds.
Add Self raising flour, Baking powder, Caster Sugar and Mix together Spd 4 for 10 seconds.
Add butter and eggs and mix Speed 4 for 8 seconds.
add 90grams of choc chips and mix "Counter-clockwise operation" spd3 for 8 seconds.
divide batter into your muffin tray and sprinkle the remaining chocolate chips on top of each muffin.
Bake in oven for 20-30 mins or until a nice golden colour and skewer comes out clean.
Tip
Healthy Version
Substitute flour for wholemeal flour and the caster sugar for your sweetener of choice, i use coconut sugar.
