Ingredients

250g flour, 125g butter, 1 egg, 50g sugar, salt, 3 Tbsp almond flour, butter to grease round cake tin. Filling: 6 sour apples (approx.800g), juice of a lemon, 150g butter, 120g raw sugar, 1 egg, lemon grind, 4cl almond liquor or essence, 250g pure cream,

  • --- extra sugar and cinnamon mix, for topping

Recipe's preparation

  1.  


    For the filling, mill lemon grind and raw sugar 10 sec/speed 9, set aside.


    Mill a hand-full of almonds and the sugar 20 sec/speed 9. Add all other ingredients (egg, butter, salt, flour) and knead 3 min/speed 1. Wrap in Thermo Mat and put in fridge for half hour.


    Peel, core and quarter apples, drip lemon juice over it, set aside.


    Grease cake tin and lay out with dough, push some up around the edge for a rim. Place Thermomix Silicone Pie Weights onto it and bake in oven for 15 min/200 C.


    For the filling:


    Insert butterfly, whip pure cream 5-40 sec/speed 3.5 or until firm but fluffy, set aside,


    (no need to clean bowl), mix all other ingredients, including sugar/ lemon grind mix, 1 min/speed 4.


    Gently combine with whipped cream, top onto pre-baked base, layer apple quarters in a circle atop, and sprinkle with almond rasps, bake on 200C for a further 35-45 min.
