Ingredients
Boiled Banana Cake
- 400 grams banana, over ripe is best, generally 3-4 depending on size
- 250 grams sugar
- 1 tsp bicarbonate of soda
- 30 grams Milk
- 60 grams Butter, softened
- 350 grams self-raising flour
- 2 large eggs, lightly beaten

- Peel bananas and add to mixing bowl. Mix 20 secs/speed 3.
Add sugar, bicarb, milk, butter. Mix 10 secs/speed 4.
Bring mixture to the boil. 15 mins/80C/speed 1/MC off
Allow mixture to cool in the bowl for around 30 minutes.
Whilst mix is cooling, lightly grease baking tin with butter and line with baking paper. Preheat oven to 180C.
Once cooled, add flour and eggs. Combine for 1 min/speed 5/MC on.
Scrape down sides and stir gently with spatula.
Pour into prepared tin and bake in oven for 45-50 mins, or until completely cooked through and golden brown.
I generally poke a skewer in the centre to test, if skewer comes out clean then cake is cooked.
Allow cake to cool in tin on a wire tray.
Serve once cooled. Is amazing with a slight smear of butter on one side.

Tip
Over ripe bananas are the best for this recipe. I used roughly 3-4 medium sized bananas.
Store cake in an air tight container in either the fridge or cupboard, generally lasts 4 days before going stale. however, it never lasts longer than a day in my household as the k,ids love it.
Great mix to cook in muffin or cup cake trays, cook time may vary but test with skewer after 12 or so minutes.
