Recipe's preparation

    Lemon & sour cream cake
  1. Preheat oven to 160deg. Grease and line a cake tin (20cm/8-inch round or similar
  2. Place the softened butter and sugar in the bowl. Mix for 1 minute at speed 4, scraping down the sides as needed, until light and fluffly
  3. with the Thermomix running at speed 3, add the eggs one at a time through the hole in the lid, mixing for about 20 seconds after each addition.
  4. Add the lemon rind to the bowl and mix for 10 seconds, speed 3.
  5. Combine 11/2 Cups of flour and 11/2 tsp of baking powder in a seperate bowl.
  6. Speed 3 alternate adding the flour mixture and sour cream in three batches. start with a third of the flour, mix for 5 seconds, then add a third of the sour cream, mixing for another 5 seconds. Repeat until all the flour and sour cream are incorporated. Avoid overmixing; just mix until combined.
  7. If needed gently fold the batter with a spatula to ensure everything is combined.
  8. Pour the batter into the prepared cake tin and smooth the top.
  9. bake 55 - 65 minutes, or until a skewer inserted into the centre comes out clean.
  10. Clean mixing bowl.
  11. in the bowl add sugar, lemon juice and water to the bowl.
  12. Heat 3 minutes, 80 deg, speed 2 or until sugar has completely dissolved.
  13. slowly drizzle the lemon syrup over the warm cake, allowing it to soak in.

Tip

To prepare cut the zest of your lemons and blend them 3 seconds speed 10, remove and set aside
