Ingredients
Caramel Squares
- 120 g date, Medjool, Pitted
- 200 g self-raising flour
- 1 tsp Vanilla Paste
- 1 egg
- 50 g raw sugar
- 120 g Butter
Icing
- 150 g icing sugar
- 15 g cacao powder, raw
- 1-2 tsp water

- Preheat oven to 180°C and line a slice tin with baking paper.
- Blitz 120g pitted medjool dates for 20 sec/speed 4 20 sec/speed 4. Then tip out and set aside to use later. No need to wash the jug.
- Cream together 120 g butter, unsalted and 50 g rapadura sugar 20 sec/speed 4. Scrape down sides and repeat 20 sec/speed 4.
- Add 1 egg and 1 tsp. vanilla bean paste and mix 15 sec/speed 3.
- Add reserved dates back into bowl and mix 10 sec/speed 6.
- Add 200 g self-raising flour and mix 15 sec/speed 3.
- Add 200 g self-raising flour and mix 15 sec/speed 3
- Press out into slice tin and bake for approx. 15-20 mins, till nice and golden all over. Allow cooling in tin.
- 150g icing sugar 15g cacao powder 1 -2 tblsp water Mix icing ingredients together in a small bowl. Add extra water if it is not runny enough, or add more icing sugar if too runny.
- Drizzle over slice and place in the fridge to set.
