Ingredients
cake mix
- 250 grams Butter, cubed
- 250 grams dark chocolate 70%, broken into pieces
- 400mls coconut milk
- 150 grams castor sugar
- 2 eggs
- dash vanilla extract
- 155 grams plain flour
- 120 grams SR flour
- 20 grams cocoa powder
- 3 large cherry ripes, for cake
- extra cherryripes, for decorating (optional)
ganache - icing
- 100 grams dark chocolate, can use melts
- 80 grams cream

Preheat oven to 160° and grease and line 22cm spring form tin
Break cherryripes into 3 pieces each and chop speed 5 for 4 seconds -set aside
Put chocolate to bowl and blitz speed 9 for 10 seconds add coconut milk, butter and castor sugar and melt 4minutes 90° speed 3 - allow to cool to room temp
Add eggs and vanilla and mix speed 4 for 4 seconds, scrape sides and repeat if necessary
Sift flours and cocoa together add to bowl and mix speed 5 10 seconds return chopped cherryripes and mix reverse speed 5 for 10 seconds.
Pour mix into prepared tin and bake for 90 mins (heck after 60 mins)
Cool in tin for 15 minutes before cooling completely on rack.
Omce cool place in refrigerator for min 3 hours, overnight is best.
Once cool pour ganache over cake and decorate as desired.
In a clean and dry bowl
Add chocolate (melts) blitz speed 9 for10 seconds
Scrape down and add cream
Melt 4 minutes 80° speed 3
Allow to cool and thicken before spreading on cake.
Top with extra cherryripes if desired
