Recipe's preparation

    Preparation
  1. Preheat oven at 180C. Grease and line a 6cm deep, 19cm x 10cm base loaf pan.

     

    To make the chestnut meal, place toasted chestnut kernels into mixing bowl and mill 1-2 mins/speed 9, weigh 200gm and put aside.

     

    Clean and dry mixing bowl.

    Place chocolate into mixing bowl and grate 10 sec/speed 8, Scrape down side of bowl.

    Melt chocolate 2 mins /50C/speed 3. Put aside and keep warm as chocolate will harden back when cool.

     

    Separate the 6 egg whites and yolks. 

     

    Clean and dry mixing bowl.

    Insert butterfly. Place egg whites and a salt into mixing bowl and whip 3-4mins/50C/speed 4 until stiff peaks form. Pour into another bowl and put aside.

    Place sugar into mixing bowl and mill 10sec/speed 9

    Add butter and melt 30sec/90C/speed 1, then mix 1 min/speed 3

    With blade rotating, add in egg yolk through hole in mixing bowl lid.

    Add in chestnut meal (leaving about a 30gms for topping) and melted chocolate and mix 15 secs/speed 3.

     

    Pour mixture into normal mixing bowl. Put a small amount of the whipped egg white to the chocolate mixture and mix until combined. Add the remaining whipped egg white chocolate mixture and fold through gently until just combined. ( Do not overmix or the cake won’t be light and fluffy).

     

    Transfer mixture to prepared loaf pan and place in the oven for 40 – 60 minutes (or until an inserted skewer comes out clean).

    Remove from oven and set aside to cool. Remove from loaf pan and serve topped with the remaining 30gms chestnut meal.

Tip

If you are a `sweet' person, the amount of sugar can be increased another 10gm
