Ingredients

Caramel

  • 180-200 g pitted dates, (1 cup)
  • 130 g raw cashews soaked in water, (1 cup)
  • 85 g coconut oil, (1/2 cup)
  • 100 g Rice malt syrup, (1/4-1/2 cup, maple syrup can also be used)
  • 70 g water
  • salt to taste

Chocolate cupcake mix

  • 40 g Coconut Flour, (1/4 cup)
  • 15 g raw cacao powder, (1/4 cup)
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 3 eggs
  • 50 g banana, (about half a banana)
  • 20 g coconut oil
  • 100-120 g honey, (1/2 cup,maple/rice malt syrup can also be used

Recipe's preparation

    Raw Caramel
  1. ·         Add all ingredients to thermo and mix speed 8 for 1 minute. 

    ·         Taste, add salt or preferred sweetener if needed.

     

    ·         Set aside in fridge.

  2. Cupcake mix
  3. Pre-heat oven to 175 degrees celcius. Spray mini-muffin/cupcake tin with cooking oil.

    ·         Mix dry ingredients together speed 2 for 10 seconds.

    ·         Add wet ingredients, mix speed 5 for 10-20 seconds until smooth.

    ·         Mixture will be quite runny. 

     

    ·         Leave to stand for 5-10 minutes.

  4. Assembly
  5. ·         Spoon cupcake batter into mini muffin tins, 3/4 full.

    ·         Spoon half teaspoon dollops of caramel onto the cupcake mix.

    ·         Place in oven for 12 minutes.

     

    ·         Will seem quite soft when removed.

Tip

·         This raw caramel recipe makes about 1-2 cups which can be kept in the fridge or freezer to become reasonably firm, can be used as a sweet treat by itself or for raw caramel slice etc, I always have some in the freezer, great for sweet cravings!

·         I made my own coconut flour by milling 200g desiccated coconut for 20-40 seconds speed 9, ensure to check and mix with a spoon to ensure it does not turn into coconut butter.

 

·         I originally did this in cups so hopefully the conversions are correct!

    Our family is not eating refined sugar at the moment so we were looking for a suitable sweet treat recipe. These were delicious! The quantities were all accurate too. They were so yummy that it is hard to believe they contain no refined sugar! We are looking forward to eating the rest of the caramel, which I have refrigerated in a slice tin. Thanks for the great recipe!
