Cake
- 250 grams Guinness
- 250 grams unsalted butter, cut into cubes
- 75 grams cocoa powder
- 400 grams caster sugar
- 150 grams sour cream
- 2 eggs
- 2 teaspoons vanilla extract
- 275 grams plain flour
- 2.5 teaspoons bicarbonate of soda
Icing
- 300 grams Philadelphia cream cheese, cut into cubes
- 150 grams icing sugar
- 125 grams whipping cream

- 1. Preheat the oven to 180 degrees
2. Gease a 23 cm springform tin and line the base with baking paper
3. Add Guinness and cubed butter into Thermonix bowl and heat 4min/60/speed 1
4. Add cocoa powder and sugar and combine 20 seconds/speed 4
5. Add the sour cream, eggs and vanilla and combine 10 seconds/speed 4
6. Add the flour and bicarbonate of soda and combine 10 seconds/speed 3. Check the mixture. Scrape down any unmixed flour from the sides of the bowl and combine again 10 seconds/speed 3 if required
7. Pour the mixture into the prepared tin and bake 180 for 50 - 70 minutes until cake is cooked.
8. Leave in the tin to cool completely and then transfer to a serving plate - 1. Place Cream cheese, icing sugar and whipping cream into the clean dry Thermomix bowl
2. Mix 20 seconds/speed 5 until smooth
3. Spread icing over the top of the completely cooled cake

Tip
Make your own icing sugar by milling raw sugar on speed 10 for 20 seconds. You may need to repeat this step a couple of time to get a really fine icing sugar
