Ingredients

Potato Salad

  • 1000 grams potatoes, chopped into cubes
  • 4 dill pickles, thinly sliced widthways
  • 70 grams pickling liquid, from the dill pickles
  • 50 grams chicken stock
  • 40 grams white wine vinegar
  • 1/2 red onion, thinly sliced
  • 1 small garlic clove
  • 20 grams each of dill and flat leaf parsley

Mustard Mayonnaise

  • 1 egg
  • 30 grams mustard, grainy or dijon
  • 25 grams white wine vinegar
  • 250 grams olive oil
  • 120 grams sour cream

Recipe's preparation

    Mustard Mayonnaise
  1. 1. Place a measuring jug on the lid of the thermomix and weigh 250gms of olive oil and set aside

    2. Place egg and mustard into the TM bowl and heat 2min/37degrees/speed 4

    3. With the measuring cup in place, set the blades to speed 4.  Pour the oil slowly onto the lid of the thermomix jug, allowing the oil to slowly drip into the bowl.  Make sure the MC stays in place and doesn't "float"

    4. Mix until the mixture thickens to mayonnaise consistency (the sound of the blades will change as the mixture thickens)

    5. Add the vinegar and sour cream and mix 20 seconds/speed 4

    6. Remove the mayonnaise from the bowl and set aside until required

  3. 1. Chop the garlic clove 3 seconds/speed 7. Set aside 

    2. Add the dill and parsley and chop 3 seconds/speed 7. Set aside

    2. Add 500ml water to the TM jug

    3. Place the potatoes into the Varoma basket and steam 20 minutes/varoma/speed 2 or until tender when piereced with a knife or skewer

    4. Transfer potatoes to a bowl and add the dill pickles, the pickling liquid, chicken stock, vinegar, red onion and garlic and stir to combine. Season to taste.

    5. Leave until potatoes have cooled completely. Pour off any excess liquid that has not been absorbed

    6. Add the mayonnaise to the potatoes and stir to combine.

    7. Stir in the herbs and serve at room temperature
