Chocolate Layer Cake
- 300g caster sugar
- 160g plain flour
- 80g cake flour
- 80g cocoa powder, 70% cocoa
- 11/2 level teaspoons Baking Powder, gluten free
- 1 level teaspoons bicarbonate of soda
- 230g unsalted butter
- 4 eggs
- 1 cup Plain Greek Yoghurt
- 2 tsp vanilla extract

- 1. Preheat the oven to 170 degrees C. Generously grease three 20cm cake pans with non-stick spray or butter, and line sides and base with baking paper[img title="" height="1" width="1"]https://ir-na.amazon-adsystem.com/e/ir?t=yinmomyangmom-20&l=ur2&o=1[/img].
2. Place the sugar, flours, cocoa, baking powder and baking soda into mixing bowl and mix on speed 5 for 5 seconds. Cut the butter into small pieces and add it to the dry ingredients. Mix on speed 5 for 30 sec to a minute or until the mixture resembles damp sand. Add the eggs, greek yogurt and vanilla and mix for 30 seconds. Scrape the bottom and sides of the bowl with a silicone spatula. Mix on speed 5 for about 60 to 90 seconds, to aerate the batter and strengthen the cake's structure.
3. Divide the batter evenly between the three prepared pans, and bake for 30-40 minutes, or until a toothpick inserted in the thickest part of the cake comes out clean or with one or two moist crumbs.
Tip
Layer this cake with a chocolate frosting to make the cake in the picture. You will need a double batch of this recipe for layer cake.
