Ingredients
Cinnamon Mix
- 50 grams Butter, Room Temp
- 40 grams raw sugar
- 3 teaspoons ground cinnamon
Dough
- 50 grams Butter, Cubed, Room Temp
- 225 grams Milk
- 5 grams Dried Instand Yeast
- 15 grams raw sugar
- 375 grams bakers flour
- pinch Salt.
Butter Icing
- 75 grams Butter, Cubed, Room Temp
- 100 grams raw sugar
- 1/2 teaspoon vanilla extraxt

Add all Cinnamon Mix ingrediance in TM bowl and 10sec/speed4. Set aside.
Add butter and milk to TM bowl, heat and melt butter 3min/50C/speed2.
Add remainding ingredients and mix 6sec/speed6, then knead 5min/"Closed lid" /"Dough mode" .
Transfer dough onto ThermoMat (or lightly floured benchtop) and work into a ball. Wrap in ThermoMat (or place in a bowl and cover with a tea-towel). Leave to prove in a warm place for 30 min or until doubled in size.
Preheat oven to 180C.
Knock down dough. Roll into 1/2cm thick rectangle (about 40cm x 30cm). Spread cinnamon mixture over dough
Roll into a log and cut into 10 scrolls.
Place scroll pieces cut side up on baking tray with baking paper. Leave to prove for 20 min in a warm place.
Bake 15-20 min until golden and cooked through.
Mill suger for 10sec/speed 9Add butter and vanilla extract and mix to combine speed6-7/37C/15seconds.
Spread over warn scrolls and Enjoy

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Wow, these taste sensational. Such an easy recipe. I'm not really a baker and haven't ever used yeast before. Really simple recipe but the end product looks like it was baked by a professional. We baked these today as a practice run for Christmas day brunch. Amazing.
Recipe hard to follow at times, saying add all remaining ingredients, but that does not include the icing ingredients which for a novice cook would be hard to follow.
Nice recipe otherwise.
So glad I had absolute success with this recipe. Great amount of sweetness (I did halve the icing). Tried a different recipe last week and it was a FAIL. Incorrect measurements. Thank you! Now to pace myself eating them.

I think next time around I’ll add a lot more cinnamon - it was a bit too subtle for me.

These are seriously fantastic. The dough is amazing to wirk with and they are very simple to make. I’ve done them for charity brunches at work and the whole company was talking about them ans complimenting me.

These turned out so well and looked really special. A lovely dough to work with too....
Only thing is that they are very sweet.... perhaps a little less sugar in the icing next time, just to take the edge off, although the kids love them just as they are!
