Cake
- peeled rind of 1 lemon
- peeled rind of 1 orange
- 250 g softened butter
- 300 g castor sugar
- 4 eggs
- 250 g SR flour
- 85 g P Flour
- juice of 1 lemon
- juice of 1 orange

1. Preheat oven to 160degrees
2. Peel the rind of 1x lemon and 1x orange. Blitz in TM for 10 secs, speed 9
3. Add sugar and butter to bowl. Blend for 30 secs, speed 5
4. Insert butterfly
5. With blades rotating on speed 3 and MC off, crack eggs one at a time through the lid until incorporated. About 40 secs
6. Scrape down sides. Blend again for 40 secs, speed 3
7. Remove butterfly
8. Add flours and juices. Blend for 30 secs on speed 5
9. Pour mixture into prepared cake tin. Bake at 160degrees for approx 1 hr or until skewer comes out clean.
10. Cool cake in pan before turning out on wire rack.
11. When cooled, dust with icing sugar or ice with glace icing or cream cheese frosting

Delicious, light and a wonderful crusty top. Used a small heart shape pan and some additional small heart moulds. Cooked for 35 mins.
A really good citrus flavoured recipe. I topped it with a simple citrus icing.
It is a large cake and I found in my oven at least it was best to bake at a lower temp for a longer time.
Very yummy moist cake easy to made. My 7 year old made it. We topped with cream cheese icing
