Coconut & Pineapple Muffins

  • 50 grams Butter
  • 120 grams sugar
  • 2 eggs
  • 150 grams yoghurt
  • 200 grams crushed pineapple
  • 320 grams self-raising flour
  • 80 grams dessicated coconut

Recipe's preparation

  1. Preheat oven and grease muffin pan.

     

  2. Blend butter and sugar 5 secs speed 5.

  3. Add eggs, yoghurt and pineapple. 5 secs speed 5.

  4. Combine flour and coconut. 5 secs speed 7.

  5. Place in prepared tins and top with previously combined sugar and coconut if desired.

    Bake 180C 25 mins.

Tip

A topping can be made by combining sugar and dessicated coconut and sprinkling on top before cooking.

    I doubled this recipe as I planned to share some with others and was shocked how much one batch made. I added fresh pineapple which I crushed in my thermi before making this. It wasn't as sweet as tinned pineapple would be as it has loads of sugar added to it when they preserve it. Ended up making 12 muffins and a huge bar loaf. Tasted yummy. I might add some crushed macadamias to it next time. I did think of slicing a banana and adding it to the top of each muffin before putting it in the oven but it was an afterthought and I didn't do it. I'm sure that would add to it. Thank you for sharing. 😊

    I used whole meal flour and fresh pineapple (which was very sweet to eat by its self). Ended up being quite bland and a gluey texture unfortunately. perhaps if I'd followed the recipe we might have had a different out come?
