- 150 g Unsalted Butter at room temp
- 120 g castor sugar
- 2 eggs
- 1 teaspoon vanilla essence
- 250 g Self Raising Flour
- 80 g Choc Chips, optional
- 125 g Milk

I'm cooking this todayRecipe's preparation
Insert Butterfly and cream together Butter and Sugar for 3 mins, Speed 4.
Add eggs through MC hole and vanilla essence and mix for 2 mins, Speed 4.
Add Self Raising Flour and mix 30 secs, Speed 4.
Add milk and choc chips through MC hole and mix for 30 secs, speed 3.
Add mixture to muffin cups and bake for 15 mins or until lightly brown.
Leave in muffin tray for 5 mins until cooled before removing.
You can ice with Choc Icing like I did in the photo.
Preheat oven to 180 degrees. Put muffin cups into Muffin Tray

Yummy, light, fluffy cupcakes, thank you for the recipe. I put about 130g of choc chips in it which meant each cupcake had a good few in it.
