Ingredients

Carrot Cake

  • 300 g Soft Light brown sugar
  • 3 eggs
  • 300 ml Sunflower Oil
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon Ground giner
  • 1/2 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 300 g carrots, cut in large chunks
  • 300 g plain flour

Cream Cheese Frosting

  • 300 g Granulated sugar
  • 50 g unsalted butter, at room temperature
  • 125 g cream cheese, cold

Recipe's preparation

    Carrot Cake
  1. Preheat oven to 180C

  2. Prepare 2no. 20x20cm cake tins - lightly greased and lined with 2 strips of baking paper to form a cross

  3. Weigh all ingredients (under Carrot Cake heading) into TM bowl

  4. Mix for 30-40 seconds/speed6

  5. Scrape down side with a spatula

  6. Mix again for a few seconds/speed 6

  7. Pour the batter into the prepared tins

  8. Bake in the preheated oven for 20-25minutes, or until golden brown and the sponge bounces back when touched

  9. Cream Cheese Frosting
  10. Grind 150g of the sugar on speed 10 until like icing sugar. Tip into a bowl and repeat with remaining sugar

  11. Add the cream cheese and butter

  12. Mix 20seconds/speed 3

  13. Scrape down the side of TM bowl and mix again for a few seconds/ speed 3

  14. Insert the Butterfly Whisk and whisk for 30 seconds/ speed 2 until you have a completely smooth icing. Ice your cake when it is completely cool

Tip

If you don't have much success with your icing sugar, you can use  'ready-made' icing sugar.

Also, if you want a low-fat version - substitute half the oil for natural yoghurt. This also makes a smoother and more creamy cake

    Made this last night & I'm a little confused at how high yours looks in the picture and that there is no flour in the recipe list..

    However, I added 50g coconut flour at the end.. cooked for 40-45 mins & its yummy & moist. My son loves it too... So, thank you for sharing. x
