Ingredients
Dough
- 480 grams Flour (plain)
- 1.5 teaspoon baking powder
- 1/2 teaspoon bicarb soda
- 120 grams caster sugar
- 1 Egg (Lightly Beaten with Fork)
- 185 grams Milk
Sugar Dusting
- 150 grams caster sugar
- 1.5 teaspoon ground cinnamon

1. Pour flour, baking powder and bicarb soda into TM bowl mix 2sec speed 2.
2. Add sugar mix 2sec speed 2.
3. Add egg, vanilla and milk mix 4sec speed 4 or until mixture is well combined.
1. Using a deep Frying pan add enough oil to come 4cm up side of pan.
2. Heat over medium-high heat - you will know oil is at the right temperature when you add a tiny bit of Dough mixture and it bubbles and bounces on the surface.
3. Drop 1 tablespoon of batter into oil. Repeat until you have used all mixture -take note this is a sticky batter so you need x2 table spoons to scrape off each as you are off loading batter into oil.
4. Cook, turning, until doughnuts are puffed and golden all over. Using a slotted spoon, transfer doughnuts to a plate lined with paper towel to drain.
NOTE: If you are making these for the next day you don’t have to leave doughnuts in oil for that long as when re-heating the next day they are a lot more soft and cook better with a 30-50sec reheat in Microwave. (Otherwise overcooked balls turn to very hard and dry doughnuts)
1. Combine extra sugar and cinnamon in TM bowl and mix 2 sec Speed 3
2. In a large bowl toss doughnuts in cinnamon mixture to coat all over.
3. Enjoy - these are delightful

Take your time cooking these Doughnuts, but be careful because the oil is hot even though its not sizzling! Enjoy

You can make Large balls or small little ones, mixture isnt that easy to work with but I find if I drop it into the oil and it looks an odd shape just pull it out and mold it with your spoons then place it back into the oil.
