Ingredients
Easy Butter (Tea) Cake (Cupcakes)
- 125 grams Butter, Softened
- 140 grams caster sugar
- 2 eggs
- 150 grams self-raising flour, Or 1 cup
- 75 grams Milk, Or 1/4 cup
- 1 level tsp vanilla extract, Or paste

- Weigh in 140g caster sugar and add 125g butter, softened and mix for 15 sec/speed 4. Scrap down sides of bowl and mix further 10 sec/speed 4
- Add in 2 eggs 150g (or 1 cup) SR flour 75g (or 1/4 cup) milk 1 tsp vanilla extract or paste and mix 30 sec/speed 5 Scrape down the bowl and repeat further 30 sec/speed 5
- Pour mixture into lined cake tin (not a big one, say 20cm or so) or distribute into cupcake patty's as desired (each only half to 2/3 full)
- Bake in a 180C (fan forced) oven for approx 30 minutes until knife put into centre comes out cleanish (approx 16 to 20mins for cupcakes dependingon how big/small they are). Keep an eye on them to make sure you don't overdo them.
- Allow cake to sit in tin for 5 to 10 mins then remove cake place on a cooling rack...
- Top with your favourite icing or buttercream. . Or eat as is .... Enjoy!!
Tip
For a cinnamon tea cake variant: mix approx 1 tbsp raw or caster sugar with approx 1 tsp cinnamon in a bowl and sprinkle generously on top of cake batter before you put cake in the oven to bake... alternatively, you can brush some melted butter on the cake straight after it is out of the oven and sprinkle the sugar and cinnamon mix on then.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
