Ingredients
Cake
- 4 carrots cut in 3
- 220 grams sunflower oil
- 230 grams brown sugar
- 3 Eggs, Large
- 320 grams Self Raising Flour
- 1/2 tsp bicarb soda
- 1 tsp cinnamon
- 1 tsp Nutmeg
- pinch salt
Icing
- 200 grams icing sugar - made in TMX
- 30 grams Butter
- milk to combine
- Handful of Walnuts

Preheat oven to 180 degrees celcius
Add carrots to bowl and chop on speed 5 until nicely grated - approx 5 seconds
Add all other ingredients and mix on speed 4 until combined.
Pour into 2 greased loaf tins.
Bake for 30-40 minutes, or until cake is light golden and springs back when touched in the middle.
Allow to cool before icing.
Add Walnuts to bowl. Put dial on Closed lid position and turbo twice to chop. Remove and set aside.
Add icing sugar (or mill your own), butter, and a TBSP of milk. Insert butterfly and turn dial to speed 4. Keep adding a little milk until icing is a spreadable consistancy. Only a few TBSP of milk is needed in total so only add a tiny amount at a time.
Spread icing on cakes and sprinkle chopped walnuts over the top. ENJOY!!

Chopped walnuts can also be added to the cake mix if desired.
Also great with a cream cheese frosting, but I like to keep things simple with ingredients I have in the pantry!

Can you use olive oil?
Nice and moist cake, used gluten free flour, just made it a bit bland so might add some more salt or melted butter for taste.
