Ingredients

Fruit and Almond Tart

  • 3 eggs
  • 2 teaspoon brown sugar to sprinkle
  • 60 grams Butter
  • 140 grams almonds
  • 45 grams sugar
  • 1 teaspoon Vanilla essance

Recipe's preparation

  1. Heat oven to 170 degrees.

    Grease a 9-inch fluted tart pan or pie dish with butter; set aside.

    Place almonds, zest and sugar in mixing bowl and chop for 6 seconds, speed 6.

    If using dried fruit add now and coarsely chop

    Add flour, baking powder, cinnamon and salt and mix for 5 seconds on speed 3 to combine.

    Add eggs, butter, honey, essence & juice.
    Mix for 30 seconds on speed 3-4 or until batter is just mixed.

    Pour batter into the pan.

    If using fresh fruit
    Remove stem from each fruit and cut in half. Arrange halves cut side up over the batter.

    Sprinkle with brown sugar, cover and bake for 25 minutes, until golden outside and dry at centre when a skewer is inserted.

    Cool before serving.

Tip

You could make this using different fruits, like plums.
This is very nice served with stewed apple and cream.

Take care the edges don't burn by covering during cooking.
