Ingredients
12 oz or 340 grams butter
- 340 grams Butter
- 3 cups raw sugar, I leave this out
- 1020 grams Mixed fruit
- 3 tins Pineapple crushed, or 1 fresh crushed ( it says small tins but I use 440 g tins
- 3 teaspoons Bi Carb Soda
- 6 Large Eggs.
- Plain Flour ( 3 large cups )
- S/R Flour ( 3 large cups )
- or for Gluten Free use 6 Cups of Almond Meal

I'm cooking this todayRecipe's preparation
Put first 4 ingredients in Thermomix and cook on 100 for10 to 20 minutes "Counter-clockwise operation" "Gentle stir setting"
Once done take mixxture and place in a large bowl till mixture is cool or even cold.
Then add remaining ingredients and mix by hand until blended.
Place mix in a lightly floured cake dish of choice and cook at 165 degrees C for about 1 and half hours or until cooked - Gluten Free cake tends to tke a little longer to cook.
I only ever make 1/3 of this mix but if you have a big family or want to freeze it is a great recipe
