Muesli slice
- 80 g almonds
- 145 g pitted dates
- 20 g chia seeds
- 45 g Shredded coconut
- 200 g dried fruits, eg, sultanas, cranberries, mixed fruit, apricots
- 40 g Rapadura, (or honey)
- 100 g coconut oil
- 1 egg
- 105 g rolled oats
- 1 tsp cinnamon
- 1 tsp baking powder
- 30 g pepitas

1. Preheat oven to 180deg, line a slice tin with either baking paper or foil that is greased
2. Place 80g almonds in mixing bowl and chop 8 sec/speed 7 transfer into a small bowl and set aside.
3. Place dates in mixing bowl and chop 30 sec/speed 7. Scrape down sides of mixing bowl with spatula.
4. Add remaining ingredients including the reserved almonds and mix 20 sec/"Counter-clockwise operation" /speed 4
5. Transfer mixture to prepared tin and press down evenly.
6. Bake for 15-18 minutes 180 deg until golden, allow to cool in tin then slice into 24
Tip
The dried fruit can be any fruit of your choosing I used mixed dried fruit, cranberries & sultanas. you could just use sultanas.
To make sure that it is gluten free use rolled oats that are gluten free and check your baking powder is gluten free or make your own using recipe in the Basic Cookbook

Absolutely delicious!
I made these muesli bars last week and they were delicious. I shared them at work and those who got to try them loved them too. I added natural muesli to the mix as well and a couple of other types of seeds and dried fruits and the end result was not too sweet and had a great texture. I will keep this recipe as a favourite. Thanks for sharing.
