- 100 g raw sugar
- 260 g flour
- 2 eggs, Large
- 2 tsp baking powder
- 1 pinch salt
- 250 g Milk
To cook
- 2 tsp Rice Bran Oil, Or oil of choice

- Place raw sugar in bowl and mill 5 seconds/speed 10 to make caster sugar.
- Add remaining ingredients and mix 20 seconds/speed 5 scrape down sides of bowl and mix for another 10 seconds/speed 5 or until all combined.
- Heat frying pan on medium heat, add 1-2 teaspoons of rice bran oil then place tablespoons of mixture in to pan. Cook till top is bubbly then turn and brown the other side.
- Enjoy topped with your favourite jam and cream or with butter or just by themselves!

Tip
This is a conversion of a family favourite recipe of my mother. You will find after greasing the frypan that once you have cooked the first batch you won't have to grease it again they just don't seem to stick as long as you only have the pan on medium heat.
Make these as small or as big as you wish.
Mum's original recipe has been doubled because there were never enough. Her recipe used SR flour but I used plain flour and baking powder that was made in the Thermomix. See Basic Cook Book or Everyday Cookbook.

So simple. I added a grated apple for a little extra flavour/nutrition.
Worked great! Nice and fluffy 😊 Left overs were sealed in zip lock bags and kept in fridge for the kids to take to school.
Worked beautifully, I let the mixture sit for 10 minutes or so and it thickened up nicely.
