Ingredients

GF Apple Crumble Cake. Modified from Irish Apple Crumble Cake thanks Donal Skehan!

  • 120 g Butter, soft
  • 150 g brown sugar, soft
  • 2 eggs, large, free range
  • 200 g GF SR Flour
  • 1 tsp cinnamon
  • 1 tbsp Milk
  • 1 Granny Smith Apple, large, approx 150g

Crumble Topping

  • 70 g castor sugar, vanilla sugar can be used. I blitsed half a vanilla pod with the sugar
  • 40 g GF plain flour
  • 50 g Butter, soft, room temp

Recipe's preparation

    Batter
  1. 1. Pre-heat oven at 180. Grease and line round 20cm round cake tin.
    2. Insert butterfly whisk. Add butter and sugar to bowl speed 3/2mins (until pale). Scrape down sides of bowl.

    3.Speed 3/30sec, until blended, add eggs, 1 at a time.

    4. Remove whisk. Add flour, pinch of salt, cinnamon and milk.

    5. Stir through appleGentle stir setting"Gentle stir setting" /Counter-clockwise operation"Counter-clockwise operation" /30 sec.
  2. Place batter into prepared tin. Spread evenly with spatula, the mixture is thick.
  3. Crumble Topping
  4. 1. Place ALL ingredients into bowl. Speed5/30sec or until resembles bread crumbs.

    2. Place crumble ontop of cake batter and bake for 40-60min ( depending on oven) until skewer comes out clean. Leave in cake tin 5 mins.

    Eat hot with salted caramel sauce or custard, can be eaten cold as well. Enjoy!!

    I loved making this cake, it was really easy and tasted delicious, not overly sweet either.

Tip

This recipe was originally in ounces and used normal flour.
You can use normal flour and it will work out just as good, measurements are the same, you can use PLAIN flour in the batter and add 2 tsp of baking powder.
