- 200 grams Gluten free plain flour
- 80 grams Desiccated Coconut
- 110 grams brown sugar
- 2 teaspoons gluten-free baking powder
- 1/2 teaspoon bicarbonate of soda
- 200 grams mashed bananas
- 130 grams coconut oil
- 2 eggs
- 55 grams Maple syrup

Preheat oven to 180C. Grease and line loaf pan.
Place bananas, coconut oil, eggs and maple syrup in TM bowl mix for 10seconds speed 4.
Add flour, coconut, sugar, baking powder and bicarbonate of soda to TM bowl. Mix 10seconds spped 4.
Pour mix into loaf pan and bake in oven for 1hr or until skewer inserted in centre comes out clean. Set aside to cool in pan for 5minutes before turning out onto a wire rack.

Great recipe....it's definitely a favourite in our house....I omit the maple syrup and often add another 50g of banana......

This is a great recipe. Every time I make it, it gets great reviews. I add about 50g of sultanas, 30g pepita seeds and 30g sunflower seeds.
I have made this a couple of times now and it turns out great. I don't add the maple syrup and I use butter instead of coconut oil. It's really nice toasted with butter (and some homemade plum jam).
This GF BB is as good as BB made with gluten. So easy to make. I halved the amount of sugar and maple syrup and its still a sweet BB sensation. Thank you for the recipe.
