- 200 grams almonds
- 150 grams Butter
- 150 grams raw sugar
- 5 eggs
- 1 tbsp baking powder
- 1 1/2 tbsp Cacao
- 200 grams pears peeled and cored

1. Place almonds into mixing bowl and chop 8 sec/speed 9. Set aside.
2. Place sugar and butter into mixing bowl and mix 20 sec/speed 5. Scrape down sides of bowl.
3. Add one egg and mix 10 sec/speed 5. Scrape down sides of bowl.
4. Add in remaining 4 eggs, baking powder, cacao and mix 20 sec/speed 7.
5. Add reserved ground almonds and pears - mix for 30 sec/speed 6.
6. Pour mixture into cupcake papers (3/4 filled) and bake for 30 minutes or until cupcakes spring back when pressed.
7. Allow to cool and ice with butter cream icing from EDC or Basic Cookbook (optional - can add 1-2 tbsp of cacao).
Preheat oven to 180 degrees. Prepare cupcake papers.
Tip
Have successfully substituted 200 grams black sapote (aka chocolate pudding fruit) instead of 200 grams of pears.

Speed 6 will blitz the pears quite easily.
Have I missed something? Surely the pears can't go in just peeled and cored? Are they supposed to get blitzed with the almonds? Thanks

Lovely flavour. I love the pears in these. The recipe missed out a step to add the raw cacao powder, so I just put it in with the baking powder. To make it 'sugar-free' I used 60g of raw honey instead of sugar and left off the icing - still tasted sweet and yummy! Made them into mini-cupcakes and baked for 15 mins - perfect for lunchboxes.
