Gluten Free Cinnamon Doughnuts

  • 45 g Butter
  • 45 g oil, of choice
  • 50 g brown sugar
  • 100 g white sugar
  • 325 g gluten free flour
  • 225 g Milk
  • 2 eggs
  • 1.5 level tsp vanilla extract
  • 2 level teaspoons ground cinnamon
  • 1.5 tsp Baking Powder, gluten free
  • 3/4 tsp ground nutmeg
  • 3/4 tsp salt
  • 1/4 tsp bicarbonate of soda
  • 1/2 tablespoon cinnamon
  • 50 g sugar
  • 5 tablespoons Butter, melted

Recipe's preparation

    Gluten Free Cinnamon Doughnuts
  1. 1. Preheat oven to 220 C.
  2. Prepare 12 hole doughnut tray (grease if not non-stick).
  3. Add 45g butter, oil, brown sugar, 100g white sugar to bowl, mix 20 seconds sp 4. Scrape down, 10 seconds sp 4.
  4. Add eggs, vanilla, mix 20 seconds sp 4.
  5. Add flour, baking powder, cinnamon, nutmeg, bicarbonate of soda, salt and milk. Mix 20 seconds sp 3.5. Scrape bowl, mix 10 seconds, sp 3.5.
  6. Use piping bag with large attachment, cupcake pen, or ziplock bag with corner cut out to pipe batter into doughnut tray to 3/4 full.
  7. Bake 9 minutes at 220 until pale golden brown. Remove from oven, leave in tray for 2 - 3 minutes then turn onto rack to cool.

    Repeat with remaining batter.
  8. Place melted butter in a dish, and cinnamon and sugar in another dish (mix the cinnamon and sugar together.) Take each cooled doughnut, dip half in the butter, then in the cinnamon-sugar mixture.

Tip

These keep in an airtight container at room temperature for 2 - 3 days.

    Lovely and fluffy. I may omit the nutmeg & cinnamon next time as my children didn't like it. I loved it. i added a chocolate ganache topping with sprinkles.
