Ingredients
Golden sultana cake
- 1 --- orange, rind and juice
- 180 g sugar
- 250 g plain flour
- 1.5t tsp baking powder
- 1/2t tsp bicarbonate of soda
- 1/2 tsp salt
- 3 eggs
- 120 g oil, vegetable, canola, sunflower, you choose (not olive oil)
- 1 tsp vanilla extract
- 200 g yoghurt
- 1 package Cottees Vanilla pudding mix, see photo below
- 150 g sultanas
- 2 tsp flour, extra
Frosting/Glaze (optional)
- 250g icing sugar
- 2t Butter
- 50g freshly squeezed orange juice

- Preheat the oven to 180°C /160 fan.
Grease and line a good size loaf pan size loaf pan, or a 23cm springform pan.
1. Add sugar and orange rind to the "Closed lid" . Blitz 10secs/sp9.
Save the juice for the ( optional) glaze.
2. Add remaining ingredients except for the sultanas and extra flour.
3. Blend 20secs/sp5. Scrape if necessary.
4. Combine the sultanas and flour in a small bowl and add to the "Closed lid" .
5. Combine 20secs/sp3/"Counter-clockwise operation"
6. Spread into prepared pan.
7. Bake for 1 hour, or until cooked when tested.
8. Cool on a rack, before icing (optional). - 1. Add icing sugar and butter to the "Closed lid" and blend 10secs/sp4.
2. Add enough of the orange juice to make a thin glaze or thick frosting, through the MC hole @ sp 4.

Delicious, moist and golden. I made the icing this time only because my loaf sunk when I checked it at 45mins. Next time, I’ll leave it for the full hour as my cake took longer than an hour to cook anyway. I also think it would be nice served with butter
This cake is just beautiful. It’s moist and golden in colour, the fruit is evenly distributed ( thanks to Monica’s last step of covering the sultanas in a little flour, before adding). It was delicious with a little bit of cream on the side, but would have been just as good with a little butter.
Words fail me. I need this to hurry up and cool so I can try it with some butter. I'm glad mum picked up 4 x packs of vanilla pudding mix now. You are amazing.
