- 1 dessert spoon butter
- 1 cup Self Raising Flour
- 2 tablespoons caster sugar
- 1 pinch salt
- 1/4 teaspoon bicarb soda
- 2 eggs
- 3/4 cup Milk

1. Place butter in jug & melt (approx: 1 minutes, 60 degrees, on speed 3).
2. Add the rest of the ingredients to the jug. Combine all of the ingredients (20 seconds, speed 4). Add more milk if the mixture is too thick.
3. Heat a frypan on the stove & add some extra butter (if a non stick frypan is not available).
4. Once heated, poor 1/4 cup of the mixture into the frypan at a time. Cover with a lid and wait for bubbles to rise in the batter before flipping.
5. Once both sides are cooked, serve with ice cream & maple syrup; orange/lemon juice & sugar.
Pikelets:
Tip
The lid on the frypan is not necessary, however it does help to make the pikelets fluffy.
