Ingredients
Base
- 250 g Milk
- 20 g dry yeast
- 500 g plain flour
- 75-100 g sugar
- pinch salt
- 50 g Butter or Margarine, Melted
Crumble
- 300 g plain flour
- 150 g sugar
- 20 g vanilla sugar
- 150 g Butter or Margarine
- cinnamon to taste
1 kg of Plums Ripened and Stoned

Add milk and dry yeast to TM bowl and heat at 37 degrees for 1 min speed 1.
Add remaining ingredients to TM bowl and mix at speed 6/10 seconds, then "Dough mode" for 1.5 min.
Remove dough from bowl, form to a ball on lightly floured bench and let it rest until double in size, ideally in Thermomat.
Clean bowl and dry throughly.
Add flour, vanilla sugar, sugar and cinnamon and mix on speed 6 / 10 seconds.
Add butter or margarine in pieces to TM bowl and mix for another 5-10 seconds / speed 6. Repeat step if necessary until crumble forms.
Stone and cut into eighths
Preheat oven to 200 degrees.
Lightly grease rectangular baking tray.
Knead dough on bench and roll out dough to about 1.5 to 2 cm thickness.
Transfer to tray. Poke holes with fork in dough scattered on tray.
Arrange plums on dough.
Top with crumble.
Bake for 15 to 25 minutes
