Ingredients
Base
- 75 grams sugar
- 1 lemon, rind only
- 120 grams Butter
- egg
- dash vanilla
- 1 tablespoon sour cream
- 265 grams plain flour
- 1 teaspoon baking powder
- 450 grams plums. Washed and stones removed and sliced into 8 wedges ( each plum), .I used Red Beauty plums but you can use any you like.
Topping (optional)
- 120 grams Butter
- 100 grams plain flour
- 75 grams sugar
- 1/2 teaspoon cinnamon, ground

- Preheat oven to 180C.
Grease and line a slice tray app. 30cm x 20cm.
1. Put lemon rind and sugar into "Closed lid" .
2. Blitz 20 secs/sp 9. Scrape and repeat.
3. Add chopped butter and blend sp4.5/ 15 secs. Scrape and repeat.
4. Add all ingredients except plums and topping.
5. Blend sp 4.5/ 15 seconds. Scrape and repeat.
6. Spread into slice tray.
8. Spread plums evenly over the surface.
9. Either bake as is and sprinkle with cinnamon sugar once out of the oven or prepare topping to cover the plums before baking. - 1. Without washing the bowl, add all the topping ingredients to the "Closed lid" .
2. Blend sp 4.5/ 20 seconds or until mixture forms into clumps.
3. Break off pieces and scatter evenly over plums.
4. Bake at 180C for 40-45 minutes.
Cool in tray and serve with lashings of whipped cream or ice cream.

Tip
This is a cake that my Dear Mum (Heidi) used to make when Summer plums were in season.
It was (and still is) a firm favourite.

This cake was absolutely sensational warm with custard! I used orange rind as I didn’t have any lemons, and used up the slightly soft plums from the fruit bowl (a bit less than the recipe calls for). The topping was to die for! Thank you for this delicious recipe 👍.
