Ingredients
Base
- 200 grams almonds
- 100 grams Butter, softened
- 100 grams Caster sugar
- 1 egg
- 20 grams desiccated cococnut
Lemon Curd
- 40 grams lemon juice, Aprox 1 lemon
- 90 grams caster sugar
- 80 grams Butter, cut into pieces
- 2 eggs
Coconut Topping
- 2 eggs
- 100 grams caster sugar
- 80 grams Shredded Cocnut
- 80 grams desiccated cococnut
- 50 grams almonds, whole

Preheat oven 180 C or 160 C Fan Forced. Grease and line the base and sides of a 19 x 29cm slice pan with baking paper, allowing sides to overhang.
Place Almonds into mixing bowl and mill 10 sec/speed 10
Add Butter, sugar,egg & coconut and mix 10/speed 4.
Spoon mixture into lined tray and smooth the surface with the back of a spoon.
Bake in preheated oven for 15mins or until golden.
Insert butterfly whisk.
Place lemon juice,caster sugar,butter and eggs into mixing bowl and cook 8min/80C/speed 3.
Spread Lemon curd evenly over the prepared base.
Place all ingredients into mixing bowl and mix 6sec/speed 5.
Sprinkle topping over the Lemon curd.
Bake in oven for 20 minutes or until golden.
Set aside in pan to cool completely .

What an amazing slice! Fabulous recipe, thank you. I made it dairy free by swapping butter for coconut oil in the base and Nuttelex in the curd. It was very popular with guests .
