Ingredients
Lemon Curd
- 200 g Butter
- 250 g castor sugar
- 3 Eggs.
- 1 egg yolk
- 4 Lemons, juiced
- 20 g Corn Flour
Basic Cupcake Mixture
- 1 Zest 1 lemon
- 125 g Self Raising Flour
- 125 g sugar
- 125 g Butter
- 2 eggs
- 2 level tablespoons Milk
- 1 teaspoon Baking Power
Cream Cheese icing
- 250 g Cream Cheese.
- 55 g icing sugar
- 1 tablespoon lemon juice
- 15 g Butter

Add all ingredients to the TM Bowl
Cook 90 degrees / 7 minutes / Speed 4
Preheat over 170 degrees
Place Lemon Zest in TM Bowl & process for 20 seconds / speed 10 or until very fine (might need to repeat)
Place all remaining ingredients into TM Bowl
Mix 5 Secconds / Speed 4 - Scrape down sides & repeat
Place cupckae liners in muffin tray
Half fill cupcake liner with a tablespoon batter, then a heaped taespoon of lemon curd then top with another tablespoon of batter. REPEAT with remaining mixture.
Bake in preheated oven 170 degrees / 20 minutes
Place all ingredients in clean TM bowl 30 seconds / speed 5
Decorate or pipe icing onto prepared cupcakes & garnish with shaved toasted coconut or lemon zest

I add zest to sugar and blitz for about 8 seconds speed 10. Lemon curd freezes really well. I don't think you need icing with the curd-just a sprinkle of icing sugar.
Love this recipe but haven't made for years! How many cupcakes does it make again?
Amazing!
I had to cook the curd for an extra 8 mins at 80 degrees/speed 2 and then I just poured the leftover curd into 2 jars to use as spread on scones or toast.
Found loads too much curd left over. Will halve for next time as I've waited heaps and won't get a chance to make anything with it.
These didnt work for me? ;( I did try making them in cupcake trays rather than cups though and this may be why. They werent presentable to take to a BBQ that i had planned them for, but hubby and I indulged in them anyway and they did taste delicious!
Great recipe, found I had heaps of the lemon curd compared to cake mix (which I wont complain) but yummy!! Will make again
Very tasty cupcake. over cooked them a little but they remained moist and delicious.
