- 115 grams plain flour, For base
- 30 grams Corn Flour, For base
- 60 grams icing sugar, For base
- 1/4 level teaspoons salt, For base
- 110 grams unsalted butter, For base
- 3 --- eggs, Topping
- 200 grams caster sugar, Topping
- 20 grams plain flour, Topping
- 1 level tbsp Lemon peel, Topping
- 125 grams lemon juice, 2-3 lemons in Topping

- 1. Preheat oven to 180c (160c Fan). Spray a 20cm round or square pan with oil or line with greaseproof paper.
2. BASE – Place all ingredients for base into thermomix and Blend"Blend" on speed 4 for 10 secs.
3. BASE- Blend"Blend" a further 10-15 secs on speed 4.5. Blend until the mix comes of the side of the thermomix and forms a soft ball.
4. BASE- Place into pan and press firmly down and up against the edges.
5. BASE- Place base into oven and cook for approx. 20-25mins until lightly golden brown.
6. MAKE TOPPING WHILE BASE IS COOKING. WE WANT THE BE ABLE TO POUR THE TOPPING STRAIGHT ONTO HOT BASE AND PLACE BACK INTO OVEN. - 1. LEMON TOPPING – Place all ingredients into thermomix and blend"Blend" on speed 4.5 for 20 secs.
2. LEMON TOPPING - Blend"Blend" a further 10 secs on high speed. (The mix will be runny; this is how you want it)
3. Pull base out of oven and immediately pour LEMON TOPPING onto base. Place back into oven.
4. COOK – In oven for 20 mins until the topping feels soft to touch. This is then set.
5. Remove from oven, let cook on bench for 1 hour. Refrigerate for 2 hours.
6. SLICE into the desired serves and dust with icing sugar.
