Streusel Topping

  • 75 grams raw sugar
  • 150 grams walnuts
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon Nutmeg

Cake

  • 180 grams raw sugar
  • Rind of 1 Lemon
  • 250 grams Butter
  • 300 grams sour cream
  • 2 eggs
  • 350 grams SR flour
  • Juice of 2 lemons
  • 40 grams Milk

Recipe's preparation

    Streusel Topping
  1.  Place Streusel ingredients in TM bowl. Set dial to closed lid position, and pulse turbo button twice. Set aside.

     

  2. Cake
  3.    Place sugar and rind in TM bowl. Process 20 seconds on speed 8.

  4.    Add butter mix for 20 seconds on speed 5, scrape down sides. Mix another 20 seconds on speed 5.

     

  5. Add remaining ingredients, mix 20 seconds on speed 4.

     

  6.   Spread half of the mixture into a greased and lined 23 cm cake tin. Top with half of the streusel. Repeat with remaining cake mixture and finish with streusel topping.

     

  7. Bake in a preheated oven 170 ° for 1 hour or until cooked.

  8. Serve warm with whipped cream or custard.

     

Tip

This cake freezes well, and makes a great winter dessert served with warm custard.

    This Lemon Streusel Cake is super tasty.

    I had small lemons, so I added extra rind and juice.

    Long lasting cake too...

    Wow - AMAZING cake!!! 

    I had some mascarpone to use up so used that instead of sour cream and it made the cake so moist and decadent. I also had some ripe plums so layered those in the middle with the crunchy streusel and it was divine..... I also used almonds as I didn't have walnuts.

    Yumbo, mine had a thick custard texture. Not sure if it is meant to but it was still delish !

    Yum! Easy and delicious. As has no walnuts, I used Pecans instead.
