Ingredients

Pastry

  • 240 g plain flour
  • 180 g unsalted butter, cubed
  • 1/2 teaspoon salt
  • 3 tablespoon water

Lemon filling

  • 3 lemons
  • 6 eggs
  • 250 g castor sugar
  • 200 Ml cream

Recipe's preparation

    Pasty
  1. Place flour, butter and salt into the TM bowl and mix for 10 secs, speed 6.

    Add water and turn to knead using the dough modeDough mode"Dough mode" and knead for 20 seconds.

    Turn dough out onto Thermomat and kned lightly to combine into a ball.

    Roll out to fit your pie dish, place in dish and freeze for 20 minutes.

    Remove from freezer and blind bake using baking beads for 20 mins on 200' for 20 minutes.

     

  2. Lemon filling
  3. Put zest from 3 lemons and sugar into the TM bowl and and mill on Speed 10 for 20 seconds.

    Add juice from lemons and cream and mix for 10 seconds on speed 4.

    Insert butterly and add eggs, combine Speed 4 for 5 seconds. 

    Pour into freshly baked pastry and bake for 35 mins on 160' until almost set.

    Cool in tin for 30 minutes before servicing, dust with icing sugar.

    (create icing sugar by mill raw sugar on speed 9 for 1 minute - do this twice for best consistancy)

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).     This tart is delicious, although i found the pastry to be too wet to roll. It was sticking to the mat & rolling pin. I placed in freezer for 20 minutes in a ball before rolling out & placing in tart dish. I rolled it our as best as I could, but then I had to press into tart dish to blind bake.  The dish I used was not deep enough to take all of the lemon filling. But otherwise quite a nice flavour. Not sure where I went wrong with the pastry. Will try this one again
