Ingredients
Lentil chocolate chip cookies - gluten free
- 125 grams Butter
- 100 grams sugar
- 1 piece extra large egg
- 60 grams crunch peanut butter
- 250 grams lentil flour
- 60 grams almond meal
- 1/4 tsp Bi-carb soda
- 50 grams dark chocolate bits
- 2 tablespoons cocoa

- Preheat oven to 180 degrees (160 degrees fan-forced).
- If using large chocolate buds, add to bowl and pulse once. Put in separate bowl.
- Add sugar and mix 2 secs/speed 9 (to turn it into caster sugar).
- Insert butterfly whisk. Add butter, egg and vanilla and mix 30 secs/Speed 3.5. Remove whisk and scrape down.
- Add everything else except the chocolate bits and do 30 secs/dough function. Add chocolate chips and do another 10 secs/dough function.
- Roll into approximately 22-24 balls and press down lightly with a fork to flatten.
- Cook for 18-20 minutes. Leave to cool slightly before transferring onto cooling rack.
Tip
To make your own lentil flour, add 200 grams at a time and blitz for 1 minute on 10. I use red lentils but am experimenting with other types.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
