- 1 teaspoon vanilla essence
- 1 egg
- 2 ripe bananas, peeled and quartered
- 210 grams Self Raising Flour
- 55 grams Milk

1. Preheat oven to 170deg and prepare a 20cm round springform pan (or equivalent).
2. Melt butter, sugar and vanilla for 3 mins / 60deg / sp 2, stopping once to scrape down the sides of the bowl.
3. Add bananas and combine for 20 sec / sp 4.
4. Add egg, milk and flour, and mix for 20 sec / sp 4, scraping down the sides of the bowl once.
5. Pour batter into cake tin and bake for approximately 40 minutes or until top of cake is golden and springy.
Tip
Ice with a cream cheese or butter cream frosting. Or just serve as is.
You can reduce the amount of sugar to taste. (I've even - accidentally - left it out altogether, and it was still very yummy!)
This also makes a great, not-too-indulgent children's birthday cake.

Easy and yummy. I only used 1 banana, cause they only like a hint.

80 g cream cheese
40 g Butter
195 g icing sugar
2 teaspoon fresh lemon juice
Mill sugar into icing sugar and set aside.
Place butter, cream cheese and lemon juice into mixing bowl. Mix on speed 4 with no time attached.
2- Once all combined, add in all the icing sugar. Mix until completely combined and smooth.
I've made this twice in the last week! The kids love it, and it really is light and fluffy. I used brown sugar (the recipe doesn't specify what type of sugar) and it came out perfectly. This is now my go to banana cake recipe.
