  • 113 grams Salted butter, Softened
  • 56 grams coconut oil
  • 85 grams brown sugar
  • 75 grams raw sugar
  • 2 teaspoons Vanilla Paste
  • 2 eggs
  • 1/2 teaspoons Bi Carb Soda
  • 1/2 teaspoons sea salt
  • 300 grams Almond Flour
  • 215 grams dark choc chips
  • 85 grams pecans, Roughly chopped

Recipe's preparation

  1. Preheat oven to 175°C (fan 160°C). Line 2 baking trays with baking paper.
    Place butter, coconut oil, and sugars into mixing bowl.
    Mix 20 sec, speed 4. Scrape down sides.
    Add vanilla and eggs. Mix 15 sec, speed 4. Scrape down sides.
    Add baking soda, salt, and almond flour.Mix 20 sec, speed 5, or until well combined.
    Add chocolate chips and nuts.Mix 15 sec, reverse Counter-clockwise operation"Counter-clockwise operation" , speed 3.
    Using a tablespoon or small cookie scoop, form dough into rounds and place on prepared trays, spacing about 7 cm apart.
    Bake for 11–13 minutes, or until golden around the edges.
    Allow to cool on tray for 5 minutes before transferring to a wire rack

Tip

Roast your nuts for added flavour or use other nuts such as walnuts.

Honey could be substituted for sugar but may not produce the same result
