Ingredients
- 320 grams Self Raising Flour
- 1 teaspoon bicarbonate of soda
- 1 teaspoon ground cinnamon
- 110 grams caster sugar
- 180 grams buttermilk (normal milk will work)
- 50 grams vegetable oil (olive oil is fine)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 overripe banana, mashed
- 1 cup fresh or frozen blueberries

Preheat oven 190oC/170oC fan forced
I used 4 small loaf tins for this recipe, lined with greaseproof paper
1. place milk, oil, eggs, banana and vanilla in the bowl. Combine sp 4 for about 5 seconds.
2. add flour, bicarbonate of soda and cinnamon to the bowl, combine sp 4 - 5 for 10 seconds or until just combined
3. add blueberries and using spatula stir to combine
4. spoon into prepared pans. Smooth top
5. bake for 15 mins or until cooked.
Cool in pan for about 5 mins or so
