My Fave Vanilla Cake Recipe
- 300 g plain flour
- 2.5 tsp baking powder
- 1/4 tsp salt
- 4 egg, large
- 300 g caster sugar
- 115 g Butter
- 250 g Milk
- 3 tsp vanilla extract
- 3 tsp vegetable or canola oil

- Preheat oven to 180°C.
Grease and line 2 x 20cm cake pans.
In the Thermomix bowl, combine flour, baking powder, and salt. Mix on Speed 5 for 5 seconds. Set aside.
Add butterfly whisk, beat eggs on Speed 4 for 30 seconds.
While still beating, gradually add sugar over 45 seconds. Continue beating on Speed 4 for 7 minutes or until tripled in volume.
In a separate heatproof container, melt butter and milk in the microwave 2min but don't let boil.
Add 1/3 of the flour to the egg mixture and mix on Speed 1 for 5 seconds.
Add half of the remaining flour and mix on Speed 1 for 5 seconds.
Add the rest of the flour and mix on Speed 1 for 5-10 seconds until just combined.
Transfer the hot milk mixture, vanilla, and oil to a larger bowl.
Add about 1 1/2 cups of the egg batter. Use a whisk to mix - you can be vigorous here, will look foamy
Gradually pour the milk mixture into the egg batter on Speed 1 over 15 seconds.
Scrape down the sides of the bowl.
Mix on Speed 1 for 10 seconds until smooth and pourable.
Pour the batter into prepared pans and tap each pan on the counter 3 times to remove bubbles.
Bake in the preheated oven for 30 minutes or until golden and a toothpick inserted into the center comes out clean

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
