Ingredients

Nanny Jean's Lemon Cake

  • 200 g caster sugar
  • 130 g unsalted butter, cut into pieces
  • 1 lemon, rind & juice (approx 40g)
  • 160 g plain flour
  • 15 g baking powder
  • 120 g Milk
  • 2 eggs

Lemon syrup

  • 1 lemon, juice only approx 35g
  • 100 g caster sugar

Recipe's preparation

  1. 1. Preheat oven 180 degrees.
    2. Grease/line 20cm round cake tin.
    3. Place lemon rind in mixing bowl & chop 10 sec/SP9. Scrape down sides of bowl with spatula.
    4. Add sugar, butter & lemon juice & mix 2mins/SP3.
    5. With blades running on SP3 add eggs one at a time (approx 30 seconds).
    6. In a separate bowl combine flour & baking powder.
    With blades running on SP2 alternate between adding flour & milk to bowl. This should take about 1minute. Use spatula to gently stir any uncombined mixture.
    7. Pour into prepared tin & bake 30 mins or until cake skewer comes out clean.
    8. Clean mixing bowl.
    9. Place syrup ingredients into mixing bowl & heat 2 mins/45/sp2.
    10. Once cake is cooked but still in tin, use skewer to poke holes in the cake. Then pour over syrup. Allow to cool in tin before turning onto a wire wrack.

Tip

Can be made into muffins. Cook for 12-15minutes

    OMG your Nanny Jean makes the best lemon cake! It got demolished very quickly! I'm now going to try this with oranges as forgot to buy lemons. Thanks for sharing.
