Ingredients

To make 12 Muffins

  • 1 handful shredded coconut
  • 1 handful raw almonds
  • 6 medjoool dates, pitted
  • 2 apples, peeled, cored and quartered
  • 120 grams wholemeal spelt grain
  • 50 grams rapadura or coconut sugar
  • 45 grams Quinoa flakes
  • 2-3 tablespoons chia seeds, (see note)
  • 2 eggs
  • 40 grams coconut oil
  • 170 grams full cream milk

Recipe's preparation

    To prepare the muffins............
  1.  

     

    Make CADA mixture, place coconut, almonds, dates and apple into TM bowl.  Press the turbo button two or three times for 1 second each time.  Set aside mixture.

  2.  

     

    Place spelt grains, rapadura quinoa flakes and chia seeds (see note) into the TM bowl and mill for 5 sec/Sp 8.  Scrape down sides.

  3.  

     

    Add milk, oil and eggs to the TM bowl, Mix for 15 sec/Sp 5.

  4.  

     

    Add CADA mixture, mix together, 7 secs/Sp3.

     

  5.  

     

    Leave to cook in tray for a few minutes before turning onto wire rack to cool completely.

Tip

 NOTE:- CHIA SEEDS

Seeds can be mixed through mixture or sprinkled on top at the end before placing in the oven.  It is up to you.

 

Tastes great when eaten fresh from the oven.

 

Can be refrigerated and eaten for breakfast the next morning. 

 

Can be frozen..

 

** This recipe is a little different to the traditional CADA, I personally think a handful of dates is way too sweet for me.  So I use a smaller amount and use sweet apples to get a 'kinder' sweetness, not an IN YOUR FACE sweetness.  You can adjust these amounts to suit your tastes, but this is how I like them to taste.

I have used pre-prepared frozen CADA in this recipe before.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
